This French classic combines textures and flavors perfectly — crispy exterior, molten cheese, peppery greens, sweet honey, and crunchy walnuts.
Ingredients (Serves 4)
- 200g fresh goat cheese log
- 1 cup breadcrumbs (panko works well)
- 1 egg, beaten
- Mixed greens (arugula, frisée, mâche)
- 1/2 cup walnuts, toasted
- 3 tablespoons olive oil
- 1 tablespoon sherry vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
Preparation
The Cheese: Slice goat cheese log into 8 rounds. Freeze for 15 minutes (makes coating easier). Dip in egg, then press into breadcrumbs. Set aside.
The Dressing: Whisk together olive oil, vinegar, honey, and mustard. Season with salt and pepper.
Assembly: Toss greens with half the dressing. Divide among plates. Heat a drizzle of oil in a skillet. Fry breaded cheese rounds until golden, about 2 minutes per side. Place warm cheese on salads, scatter with walnuts, drizzle with remaining dressing.
Wine Pairing: A crisp Sancerre or Pouilly-Fumé cuts through the richness perfectly.
