The Hunt for Excellence
Each summer, our team visits farms and dairies across France, tasting hundreds of cheeses to discover hidden gems and maintain relationships with producers. This year's journey yielded remarkable finds.
New Arrivals
Persillé du Mont Cenis: A rare goat blue from Savoie. Made by just one producer, it combines the tangy freshness of chèvre with the complexity of Roquefort. Extraordinary with honey.
Saint-Félicien: This cow's milk cheese from Dauphiné is like a larger, richer Saint-Marcellin. When ripe, the center becomes almost liquid — spoon it onto bread for pure indulgence.
Tomme au Marc: A mountain cheese wrapped in grape pomace from wine-making. The marc imparts subtle wine and fruit notes while the paste develops nutty complexity.
Limited Availability
These discoveries are made in tiny quantities. We secured limited allocations for our shops. When they're gone, we must wait for next year's production.
The Importance of Exploration
Every year, we discover that France's cheese diversity remains largely unknown. Small producers making extraordinary cheeses for local markets deserve wider recognition. We're proud to connect these artisans with appreciative customers.
